And for those less keen on lobster, there are a number of sandwich options, from the quarter-pound burger to the vegetarian Caprese sandwich.

With a rotating menu, the truck prioritizes daily fresh ingredients.

Choices include the Creton Pizza with homemade creton, mozzarella, provolone and mustard drizzle and the Thunderbolt with cheese, veggies, basil, garlic and red sauce among others. The menu also includes a rotating menu of fresh-baked desserts.

Locations: Apres Drinks, Austin Street Brewery and Oxbow Brewing Company in Portland Follow: @discojalisco on Instagram Details: The daughter of Portland’s Tomaso’s Canteen, the taco food truck serves loaded tacos on fresh tortillas with fillings like braised pork, fried coconut haddock, roasted shiitakes and mole pollo. The truck also serves “otros” like street corn and beans with chorizo and queso fresco.
